Sweet Peach & Blueberry Pizza

Serves: 2 -4

Ingredients

  • 1 frozen pizza dough
  • 2 whole peaches cut into medium/small chunks to saute
  • 1 cup blueberries
  • 2 cups ricotta cheese
  • ¼ cup of water
  • 2 cups of sugar
  • 2 tbsp butter
  • 2 tbsp honey
  • 1 tbsp cinnamon
  • Powdered sugar and butter to side for garnish on top
  • Fresh mint for garnish, optional
  • Vanilla ice cream or whipped cream, optional

Directions

  • Saute peaches with water, butter, honey, sugar and cinnamon on low heat, to create a syrup. (add more water, if needed).
  • Spread ricotta on the pizza dough.
  • Add the peaches with syrup.
  • Sprinkle fresh blueberries on top.
  • Cook low and slow in the XO pizza oven, rotating so crust cooks evenly, until the dough is to your satisfaction. (approximately 12 min).
  • Use some of the peach syrup on plate & top pizza with additional sautéed peaches.
  • Dust with sugar, dot with butter. Add mint & ice cream or whipped cream, if desired.
