Smoked BBQ Ribs

With Prawns & Pesto Garlic Butter Cornbread

Serves: 4-6

Ingredients

  • 2 -2 ½ lb slab of spareribs (trimmed of excess fat)
  • Salt/pepper for seasoning (Option: Add your favorite rub)
  • 1 cup of David Burke’s BBQ Sauce**
  • 12 prawns
  • 1 bunch parsley, chopped
  • ½ cup chives, chopped approximately 1½” long
  • ½ cup basil, chopped
  • Zest of one lemon
  • Mint leaves for garnish
  • Plums or peaches (Optional)
  • Marinade for Prawns:

  • 1½ cups olive oil
  • Garlic 4 cloves
  • Salt & pepper to taste

Directions

  • Sear spareribs on the bottom level of the XO Grill to get the grill marks.
  • Move to upper level of the XO Grill to slow cook on medium low. (approx 90 mins)
  • Baste during the last 20 minutes of cook time with the DB’s BBQ Sauce**
  • Marinate prawns at least one half hour.
  • After marinating, and when ribs are almost done, grill the prawns on each side until cooked through.
  • In the final moments of grilling, baste ribs one final time. Also baste the prawns.
  • Cut ribs apart and plate. Top with prawns.
  • Top with parsley, fresh basil, chives, lemon zest & some mint leaves.
  • Add sliced plums or peaches, if including in recipe.
