Smoked BBQ Ribs
With Prawns & Pesto Garlic Butter Cornbread

Ingredients
- 2 -2 ½ lb slab of spareribs (trimmed of excess fat)
- Salt/pepper for seasoning (Option: Add your favorite rub)
- 1 cup of David Burke’s BBQ Sauce**
- 12 prawns
- 1 bunch parsley, chopped
- ½ cup chives, chopped approximately 1½” long
- ½ cup basil, chopped
- Zest of one lemon
- Mint leaves for garnish
- Plums or peaches (Optional)
- 1½ cups olive oil
- Garlic 4 cloves
- Salt & pepper to taste
Marinade for Prawns:
Directions
- Sear spareribs on the bottom level of the XO Grill to get the grill marks.
- Move to upper level of the XO Grill to slow cook on medium low. (approx 90 mins)
- Baste during the last 20 minutes of cook time with the DB’s BBQ Sauce**
- Marinate prawns at least one half hour.
- After marinating, and when ribs are almost done, grill the prawns on each side until cooked through.
- In the final moments of grilling, baste ribs one final time. Also baste the prawns.
- Cut ribs apart and plate. Top with prawns.
- Top with parsley, fresh basil, chives, lemon zest & some mint leaves.
- Add sliced plums or peaches, if including in recipe.
- Serve with Pesto Garlic Butter Cornbread**
