Asian Honey Chicken

With Teppanyaki Fried Rice

Serves: 4

Ingredients

  • 4 skinless chicken breasts, cut into chunks
  • Salt and pepper to taste
  • Oil, vegetable or canola
  • Marinade:

  • ½ cup soy sauce
  • ½ cup water
  • 4 tablespoons honey
  • 2 cups short-grain rice, cooked
  • 3 tablespoons butter
  • 2 tablespoons soy sauce
  • 2 large eggs, scrambled
  • 1 teaspoon garlic salt
  • Salt and pepper
  • ½ cup each of diced carrots, onions, zucchini, peppers or others of your choice

Directions

  • Have griddle on medium-high heat, lightly grease with oil.
  • Take marinated chicken, add salt and pepper, place on griddle.
  • Cook until just done, deglazing with some of the leftover marinade, set aside.
  • Add additional small amount of oil, if needed.
  • Scramble eggs, season with salt and pepper to taste, set aside.
  • Melt butter on griddle and add vegetables, rice and stir.
  • Drizzle with soy sauce and add garlic salt, mix well.
  • Add back in chicken and scrambled eggs and blend.
  • Place in bowl, serve hot.
