1. CHOOSE THE RIGHT CUT
RIBEYE
RICH & JUICY
NEW YORK STRIP
BOLD & BEEFY
FILET MIGNON

2. PREP IT RIGHT

PAT DRY
Remove moisture for a better sear and crust.

OIL LIGHTLY
Lightly coat the steak to promote browning.

SEASON GENEROUSLY
Use kosher salt and black pepper. Season all sides.

LET THE GRILL HEAT
Preheat your grill for at least 15 minutes.
A DRY SURFACE BUILDS A BETTER CRUST.
4. SEAR, THEN FINISH

SEAR OVER HIGH HEAT
Place steak over direct heat. Sear for 2–4 minutes per side without moving.

FLIP ONCE & CRUST FORMS
Flip only once to build a deep, even crust.

MOVE TO INDIRECT HEAT
Move steak to the cooler side of the grill.

CLOSE THE LID TO FINISH
Close the lid and cook until it reaches your target temperature.

PULL STEAK 5° BEFORE YOUR TARGET
5. CHECK THE TEMPERATURE

INSERT FROM SIDE
Insert the thermometer into the thickest part of the steak.

AIM FOR THE CENTER
Make sure the tip is in the center, not near the edge.

AVOID BONE & FAT
Bone and fat can throw off the temperature reading.
6. REST & SLICE
5-10 MINUTES
Rest the steak tented loosely with foil for 5 – 10 minutes. This allows the juices to redistribute. Slice against the grain for maximum tenderness.
